I try and cook something new every day, and these are the two best recipes I have ever made! They are called double chocolate dream cookies and pumpkin scones, here are the recipes:
Double Chocolate Dream Cookies
2 1/4 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
2 cups chocolate chips
Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in mixer bowl until creamy. Beat in eggs for about two minutes or until light and fluffy. Gradually beat in flour mixture. Stir in chocolate chips. Roll into balls and place them on an ungreased cookie sheet. Bake in preheated 375 F. oven 8 to 10 minutes or until puffed. Let stand for two minutes; remove to wire racks to cool completely. Makes about 4 1/2 dozen cookies.
Pumpkin Scones
2 1/2 cups all-purpose flour
1/4 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 cup butter (1 stick)
3/4 cup canned pumpkin
1/2 cup milk
Combine flour, brown sugar, baking powder, cinnamon, salt and cloves in a large bowl. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Combine pumpkin and milk in a small bowl. Add to flour mixture; mix just until dough forms.
Knead dough gently on floured surface 10 to 12 times. Pat half of dough into a 7-inch circle; cut into eight to six wedges. repeat with remaining dough. Place wedges 2 inches apart on ungreased baking sheet.
bake in preheated 450 F. oven for 12 to 14 minutes or until light golden color. Remove scones to wire rack; cool slightly. Serve warm. Makes 12 to 16 scones.
